It's funny that even here in France osso bucco has been adopted as the term for knuckle of veal. I doubt they take it as seriously as the Italians!

It's ages sice I've had a good one, full on with saffron rice and gremolata, yum again.

Yum indeed! Gremolada and saffron risotto make my mouth water, except right now it's 31°C in Rome! I'll save the craving for when it gets a little chillier here!

I like the way your butcher interprets your idea of "a little ossobuco." Complimenti!

I could get used to your macellaio. I wish I had tried osso bucco when I was in Piemonte/Lombardy. Next trip.
